    Lacinato Kale (Brassica oleracea var. palmifolia), famously known as Dinosaur Kale, Tuscan Kale, or Cavolo Nero, is a historic 18th-century Italian heirloom prized by culinary chefs and home gardeners alike. Growing into impressive upright, palm-like plants reaching 24 to 36 inches in height, it produces long, narrow, strap-shaped leaves featuring a distinctive deeply puckered ("savoyed") texture. The leaves display a rich blue-green, almost blackish hue. Tenderer and less fibrous than curly kale varieties, Lacinato offers a rich, earthy, and slightly nutty flavor profile that sweetens significantly after exposure to autumn frosts.
