Description

Kohlrabi White Vienna (Brassica oleracea var. gongylodes) is an iconic pre-1860s heirloom variety celebrated for its rapid growth, high reliability, and crisp, delicate texture. Producing pale, mint-green bulbous stems that sit just above the soil surface, it features translucent white, tender flesh with a sweet, mild flavor similar to a combination of crisp cucumber, water chestnut, and apple. Extremely versatile and easy to grow, it is a staple cool-season crop perfect for fresh snacking, crunchy slaws, roasting, steaming, and stir-fries.

Good to know

Very fast maturing, producing delicious 2–3 inch harvested bulbs in as little as 50–55 days
Smooth, thin skin peels easily to reveal crisp, non-pungent white flesh
Compact footprint allows for dense planting and high yields in small garden spaces and succession beds

Must be harvested promptly at 2–3 inches in diameter to prevent the flesh from turning woody or pithy
Requires even soil moisture management to prevent the swollen stems from cracking during sudden rain spells
